Instructions

  1. Whisk together lemon juice, oil, garlic, salt, and pepper for the vinaigrette; set aside.

  2. Rinse bulgur, then cover with water by half an inch and soak for 30 minutes before squeezing out excess water.

  3. While bulgur soaks, wash and thoroughly dry parsley, remove stems, and finely chop to obtain 2 cups.

  4. Halve the tomato, remove seeds and pulp, and finely dice the flesh into 1/4-inch pieces.

  5. Combine the bulgur, parsley, tomato, mint, scallions, and vinaigrette in a large dish and toss well.
