Instructions

  1. Heat oil on medium-low in a large sauté pan.

  2. Crumble farmer's cheese in a large bowl, then whisk in eggs and vanilla extract.

  3. Stir in 1/2 cup flour, sugar, salt, and baking soda until a thick batter forms.

  4. Place the remaining 1/4 cup flour in a shallow dish for dredging.

  5. Scoop dough balls, coat them thoroughly in the dredging flour, and flatten.

  6. Fry pancakes in the hot oil for 3 minutes per side, until golden brown.

  7. Serve immediately.
