Swiss Steak With Mushrooms

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat.

  2. Sauté chopped onions and sliced mushrooms for 5 minutes until tender, then remove and set aside.

  3. Cut round steak into portions, pound flour into them, season with salt and pepper, and brown thoroughly in the skillet.

  4. Add beef broth, the reserved onions and mushrooms to the browned meat, then cover and simmer on low for 45 minutes until the meat is very tender, adding water if it dries out.

  5. Adjust seasoning to taste and serve with pan drippings.
