Instructions

  1. Preheat the oven to 350 F (180 C) and prepare two 9-inch cake pans by greasing and flouring.

  2. Sift cake flour and baking powder into a bowl.

  3. Cream shortening and granulated sugar for 4-5 minutes until light and fluffy; then beat in eggs one at a time, followed by salt, vanilla, and melted chocolate.

  4. Alternately add the sifted flour mixture and evaporated milk to the creamed mixture, blending after each addition until just combined.

  5. Divide batter evenly between the prepared cake pans.

  6. Bake for 30-35 minutes, or until the cake springs back when lightly touched.

  7. For the chocolate cream cheese frosting, cream butter and cream cheese.

  8. Add melted chocolate, salt, sifted confectioners' sugar, 5 tablespoons of half-and-half or light cream, and vanilla; beat until smooth and spreadable, adjusting consistency as needed.
