Swiss Chard and Tofu Stir-Fry

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add garlic and cook until lightly browned (1-2 minutes).

  3. Stir in cubed tofu; cook until golden brown.

  4. When tofu is almost cooked, add soy sauce or tamari and stir to coat.

  5. Add mushrooms and cook for 1 minute.

  6. Add chopped Swiss chard, drizzle with sesame oil, stir, then season with sea salt and cayenne pepper.

  7. Cook chard until slightly wilted but still tender.

  8. Serve immediately over brown rice.
