Instructions

  1. Wash and sort beans, then cover them with water in a saucepan and soak overnight.

  2. The following day, bring the beans and their water to a boil, then simmer for 1.5 to 2 hours until softened, adding more water if necessary.

  3. Drain the cooked beans and process them in a blender until a smooth puree forms.

  4. Transfer the bean puree, then stir in the sugar.

  5. Heat oil in a wok or frying pan over medium-low heat, then add the bean mixture and fry for several minutes until dry, gently pressing to create a paste.

  6. Allow the red bean paste to cool before using as desired.
