Instructions

  1. Preheat waffle iron.

  2. Whisk oat flour, baking powder, and salt in one bowl. In a separate bowl, beat sweet potatoes, milk, eggs, melted butter, and vanilla extract.

  3. Combine the wet mixture with the dry ingredients, stirring until just mixed. Allow the batter to rest for five minutes.

  4. Pour enough batter onto the preheated waffle iron to cover two-thirds of the surface, then close and cook as directed by the manufacturer.

  5. Serve waffles hot with preferred toppings.
