Sweet Potato Rolls

Instructions

  1. Start boiling salted water. Peel and cube 2 sweet potatoes.

  2. Cook sweet potatoes in boiling water for 20 minutes until tender; drain, mash, cool, and measure 1 cup.

  3. Add all ingredients to a bread machine according to manufacturer instructions, then run the basic dough cycle.

  4. After the dough cycle, divide the dough into 16 to 20 pieces, shape into balls, and place in a greased 9-inch square baking pan.

  5. Cover the rolls and let them rise for 45 minutes in a warm place. Preheat oven to 375 F.

  6. Bake for 20 to 23 minutes, until browned.

  7. Brush the hot rolls with melted butter.
