Instructions

  1. Start boiling water in a large saucepan, then peel and cut sweet potatoes into 2-inch chunks.

  2. Add the cut potatoes to the boiling water and cook for 15 to 20 minutes until tender.

  3. Drain the cooked sweet potatoes, reserving some of the cooking water.

  4. Transfer the potatoes to a food processor and puree until smooth, adding reserved water as needed to achieve desired consistency.
