Sweet Potato Hash Browns

Instructions

  1. Peel and shred the sweet potato.

  2. In a large bowl, combine the shredded sweet potato with 1 tablespoon olive oil, salt, and pepper.

  3. Heat the remaining 1 tablespoon oil in a large cast-iron skillet over medium-high heat.

  4. Scoop 1/3 cup portions of the sweet potato mixture into the pan, flattening each into a patty.

  5. Cook the patties, turning once, until nicely browned on both sides, about 6 to 8 minutes total.

  6. Repeat with any remaining mixture, adding more oil to the pan if needed.
