Instructions

Preheat the oven to 425 F.

Pierce sweet potatoes, then bake on a sheet pan for 25 to 35 minutes until tender; cool completely.

Peel the cooled sweet potatoes and mash them in a large bowl.

Add flour, chickpeas, onion, garlic, parsley, cumin, coriander, lemon juice, and salt; continue mashing or process until smooth.

Lightly spray a baking sheet, then form the mixture into small balls and arrange them 2 inches apart on the pan.

Sprinkle the falafel balls evenly with sesame seeds.

Chill the falafel in the refrigerator for about 45 minutes to firm.

Preheat the oven to 375 F and bake the falafel for 10 to 12 minutes until golden.
