Instructions

  1. Preheat the oven to 425 F.

  2. Pierce sweet potatoes, then bake on a sheet pan for 25 to 35 minutes until tender; cool completely.

  3. Peel the cooled sweet potatoes and mash them in a large bowl.

  4. Add flour, chickpeas, onion, garlic, parsley, cumin, coriander, lemon juice, and salt; continue mashing or process until smooth.

  5. Lightly spray a baking sheet, then form the mixture into small balls and arrange them 2 inches apart on the pan.

  6. Sprinkle the falafel balls evenly with sesame seeds.

  7. Chill the falafel in the refrigerator for about 45 minutes to firm.

  8. Preheat the oven to 375 F and bake the falafel for 10 to 12 minutes until golden.

  9. Serve as desired.
