Sweet Potato Dip

Instructions

  1. Preheat the oven to 425 F.

  2. Scrub the sweet potato, then roast it in the preheated oven for about 45 minutes until tender, or microwave it for approximately 6 minutes until tender.

  3. Cool the cooked sweet potato for at least 30 minutes, then peel it and place it into a food processor; pulse a few times to break it down.

  4. Add minced garlic, almond butter, smoked paprika, and cayenne pepper to the processor; blend until the mixture is silky smooth, scraping down the sides as needed.

  5. Season the dip with salt and lemon juice to taste. Transfer to a serving bowl and serve immediately, or cover and chill for up to three days.
