Sweet Potato Croquettes

Golden, crisp sweet potato croquettes are prepared from a blend of sweet potatoes, butter, and egg, then deep-fried.

Instructions

  1. Heat 2 inches of vegetable oil to 365°F in a heavy pot.

  2. Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended.

  3. Chill the mixture thoroughly for at least 1 hour.

  4. Shape the chilled mixture into round or oblong croquettes, using 2 heaping tablespoons per piece.

  5. Prepare two bowls: one with beaten egg mixed with water, and another with breadcrumbs.

  6. Dredge each croquette in breadcrumbs, then the egg mixture, then breadcrumbs again.

  7. Fry croquettes in batches for about 3 minutes until golden brown.

  8. Drain fried croquettes on paper towels.
