Instructions

  1. Preheat the oven to 350 F with a rack in the center.

  2. In a large bowl, beat cream cheese until smooth using an electric mixer.

  3. Add sweet potato puree, brown sugar, and granulated sugar; beat until smooth.

  4. Blend in flour, cinnamon, nutmeg, ginger, and salt.

  5. Beat in eggs and vanilla extract until just combined.

  6. Pour the filling into a prepared pie crust.

  7. Bake for 40 minutes, or until the center is set but still slightly jiggles.

  8. Cool the pie on a rack, then refrigerate for a minimum of 4 hours or overnight to chill completely.

  9. Optionally, top with whipped cream or a dessert sauce before serving.
