Sweet Potato Chips
Homemade sweet potato chips are bright, sweet, and simple to prepare for a satisfying treat.

Instructions

Heat 1/2 inch of vegetable, canola, grapeseed oil, or lard in a large, heavy pot to 350 F.

Peel sweet potatoes, then slice them thinly and evenly.

Rinse the slices, then soak them in cold water for 30 minutes.

Drain and thoroughly dry the sweet potato slices to prevent oil splatter.

Fry the slices in single layers for approximately 3 minutes per batch, until the edges begin to darken.

Transfer the chips to paper towels or a cooling rack to drain, then season with salt and allow to cool completely until crisp.
