Sweet Potato Casserole With Marshmallows Recipe

Instructions

  1. Preheat the oven to 350°F and spray a 1.5 to 2-quart baking dish.

  2. Wash and prick sweet potatoes, then bake on a baking sheet for 1.5 hours until tender, or microwave 6-12 minutes until soft.

  3. After cooling, peel the potatoes and purée the pulp in a food processor.

  4. Add butter, brown sugar, eggs, milk, orange juice (optional), cinnamon, nutmeg, and salt to the purée, then blend until smooth before spreading into the prepared dish.

  5. Bake for 30 minutes, then remove, spread marshmallows over the top, and return to the top rack.

  6. Bake for an additional 5-10 minutes until marshmallows are browned, then serve.
