Instructions

  1. Preheat oven to 425 F.

  2. Wash, peel, and slice the green tomatoes.

  3. In a saucepan, combine tomatoes with lemon juice, lemon zest, salt, and cinnamon; cook over low heat, stirring frequently.

  4. Stir combined sugar and cornstarch into the tomato mixture. Cook until clear, stirring constantly, then add butter, remove from heat, and let cool slightly.

  5. Roll out half of the pastry dough and line a 9-inch pie plate.

  6. Pour the tomato mixture into the lined pie plate.

  7. Roll out the remaining dough, cover the pie, seal, crimp edges, and cut small slits in the top crust.

  8. Beat an egg, brush it over the crust, and sprinkle with turbinado sugar.

  9. Bake for 35 to 45 minutes, or until browned.
