Sweet German Pancakes With Sugar and Lemon

Thin German pancakes, also known as crepes, can be prepared quickly to serve with fillings or as a soup garnish.

Instructions

  1. Combine flour, sugar, and salt in a mixing bowl.

  2. Whisk eggs, milk, and optional vanilla until smooth.

  3. Incorporate the wet mixture into the dry ingredients, stir until lump-free, then let the batter rest for 15 minutes.

  4. Heat 1 teaspoon butter in a nonstick frying pan.

  5. Cook a test pancake with 1 tablespoon of batter, adjusting with milk if needed to thin.

  6. Pour 1/4 cup batter per pancake, cook until set, then flip for a few seconds before removing.

  7. Add another teaspoon butter to the pan and repeat with the remaining batter.

  8. Serve immediately, optionally rolled with lemon juice and sugar.
