Instructions
-
Start a water bath canner by placing jars inside, covering them with water, and bringing to a boil; reduce to a simmer. Simultaneously, place lids in a separate saucepan and simmer to keep hot.
-
Combine chopped cucumbers, peppers, celery, and onions in a large pot with pickling salt. Stir and let stand at room temperature for 4 hours.
-
Drain the vegetables in a colander, rinse thoroughly with cold water, and squeeze out excess liquid.
-
Rinse the pot. Add vinegar, sugar, mustard seeds, and celery seeds to the clean pot and bring to a boil.
-
Stir in the drained vegetables, return to a full boil, then reduce heat and simmer for 10 minutes.
-
Fill the hot, prepared jars with relish, leaving 1/2-inch headspace.
-
Place lids and screw bands onto the jars, tightening to fingertip tightness.
-
Process jars in the simmering water bath canner for 10 minutes, ensuring water covers jars by at least 1 inch.
-
Turn off heat, remove the canner cover, wait 5 minutes, then remove jars.
-
Once cooled, tighten the lids for storage.
