Instructions

  1. Start a water bath canner by placing jars inside, covering them with water, and bringing to a boil; reduce to a simmer. Simultaneously, place lids in a separate saucepan and simmer to keep hot.

  2. Combine chopped cucumbers, peppers, celery, and onions in a large pot with pickling salt. Stir and let stand at room temperature for 4 hours.

  3. Drain the vegetables in a colander, rinse thoroughly with cold water, and squeeze out excess liquid.

  4. Rinse the pot. Add vinegar, sugar, mustard seeds, and celery seeds to the clean pot and bring to a boil.

  5. Stir in the drained vegetables, return to a full boil, then reduce heat and simmer for 10 minutes.

  6. Fill the hot, prepared jars with relish, leaving 1/2-inch headspace.

  7. Place lids and screw bands onto the jars, tightening to fingertip tightness.

  8. Process jars in the simmering water bath canner for 10 minutes, ensuring water covers jars by at least 1 inch.

  9. Turn off heat, remove the canner cover, wait 5 minutes, then remove jars.

  10. Once cooled, tighten the lids for storage.
