Sweet Chili Sauce

A homemade Thai sweet chili sauce, superior to store-bought, can be prepared in 20 minutes and serves as an excellent condiment for various Thai dishes.

Instructions

  1. Start by combining 1/2 cup rice vinegar, 1/2 cup plus 2 tablespoons granulated sugar, 1/4 cup water, 3 tablespoons fish sauce, 2 tablespoons sherry, 3 minced garlic cloves, and 1/2 to 1 tablespoon dried crushed chile pepper flakes in a saucepan; bring the mixture to a rolling boil.

  2. Reduce the heat to medium and continue boiling for 10 minutes, or until the volume is halved.

  3. While the mixture boils, dissolve 1 1/2 tablespoons cornstarch into 3 to 4 tablespoons cool water in a small bowl.

  4. Lower the heat to low, add the cornstarch-water mixture, and stir continuously for approximately 2 minutes until the sauce thickens; then remove from heat and taste.

  5. Transfer the sauce to a small bowl or jar and serve as a condiment, dip, or marinade.
