Instructions
-
Start boiling a deep pot of salted water.
-
In a medium bowl, combine egg, salt, sugar, and vanilla, then thoroughly mix in farmer cheese.
-
Refrigerate the filling until ready to use.
-
Prepare your desired pierogi dough.
-
On a lightly floured surface, roll dough to 1/8-inch thickness, then cut into 3-inch rounds; re-roll scraps for additional circles.
-
Place tablespoonfuls of filling onto each dough circle.
-
Fold dough over to form a half-moon shape, pressing and crimping the edges to seal.
-
Once water is boiling, reduce heat to a simmer and cook 12 pierogi at a time. Stir once to prevent sticking; after they rise, cook for 3 more minutes.
-
Butter a platter, then use a slotted spoon to transfer cooked pierogi directly to it, avoiding colander drainage.
-
Repeat the cooking process for all remaining pierogi, then serve immediately with melted butter.
