Sweet Cheese Pierogi Filling

A versatile sweet farmer cheese filling suitable for pierogi or crepes.

Instructions

  1. Start boiling a deep pot of salted water.

  2. In a medium bowl, combine egg, salt, sugar, and vanilla, then thoroughly mix in farmer cheese.

  3. Refrigerate the filling until ready to use.

  4. Prepare your desired pierogi dough.

  5. On a lightly floured surface, roll dough to 1/8-inch thickness, then cut into 3-inch rounds; re-roll scraps for additional circles.

  6. Place tablespoonfuls of filling onto each dough circle.

  7. Fold dough over to form a half-moon shape, pressing and crimping the edges to seal.

  8. Once water is boiling, reduce heat to a simmer and cook 12 pierogi at a time. Stir once to prevent sticking; after they rise, cook for 3 more minutes.

  9. Butter a platter, then use a slotted spoon to transfer cooked pierogi directly to it, avoiding colander drainage.

  10. Repeat the cooking process for all remaining pierogi, then serve immediately with melted butter.
