Sweet Apple Cinnamon Empanadas

Instructions

  1. Pulse flour, salt, and sugar in a food processor.

  2. Add chilled butter and cream cheese, pulsing until the mixture begins to come together.

  3. Incorporate vanilla with two brief pulses, then form the dough into a disk, wrap, and chill for at least 2 hours or overnight.

  4. Peel, core, and cube apples.

  5. Cook apples with butter, sugars, salt, and cinnamon in a saucepan over medium heat until tender.

  6. Mix cornstarch with 1-2 tablespoons of water, stir into the apple mixture, and cook until thickened.

  7. Remove from heat, stir in dulce de leche if desired, and chill for at least 1 hour.

  8. Preheat oven to 350F.

  9. Roll out dough to 1/4-1/8 inch thickness and cut 5-6 inch circles.

  10. Wet the edge of each circle, place one tablespoon of filling in the center, fold, and firmly pinch and crimp the edges to seal.

  11. Chill shaped empanadas for 1 hour (or 15 minutes in freezer).

  12. Brush empanadas with an egg yolk-water wash and sprinkle with sugar.

  13. Bake for approximately 20 minutes until puffed and golden brown.
