Sweet Apple Cinnamon Empanadas
Sweet dessert empanadas feature a cinnamon apple filling, optionally enhanced with dulce de leche, for a delightful treat.

Instructions

Pulse flour, salt, and sugar in a food processor.

Add chilled butter and cream cheese, pulsing until the mixture begins to come together.

Incorporate vanilla with two brief pulses, then form the dough into a disk, wrap, and chill for at least 2 hours or overnight.

Peel, core, and cube apples.

Cook apples with butter, sugars, salt, and cinnamon in a saucepan over medium heat until tender.

Mix cornstarch with 1-2 tablespoons of water, stir into the apple mixture, and cook until thickened.

Remove from heat, stir in dulce de leche if desired, and chill for at least 1 hour.

Preheat oven to 350F.

Roll out dough to 1/4-1/8 inch thickness and cut 5-6 inch circles.

Wet the edge of each circle, place one tablespoon of filling in the center, fold, and firmly pinch and crimp the edges to seal.

Chill shaped empanadas for 1 hour (or 15 minutes in freezer).

Brush empanadas with an egg yolk-water wash and sprinkle with sugar.

Bake for approximately 20 minutes until puffed and golden brown.
