  1. Drain pineapple juice into a Dutch oven, reserving the chunks.

  2. Stir vinegar, soy sauce, salt, ginger, and water into the juice until smooth.

  3. Add pork chunks to the mixture and bring to a boil.

  4. Reduce heat, cover, and simmer for 1 hour until the pork is tender.

  5. Incorporate onion, green pepper, red pepper, and reserved pineapple chunks.

  6. Simmer for 10 minutes until vegetables are tender-crisp.

  7. In a small bowl, combine cornstarch with water to form a slurry.
