Sweet and Savory Coca Cola Brisket

Instructions

  1. Preheat the oven to 325 F/165 C.

  2. Place brisket in a roasting pan.

  3. Pulse onion, oil, wine, honey, Coca-Cola, ketchup, mustard, and paprika in a food processor until chopped.

  4. Pour the mixture over the brisket, then cover and marinate in the refrigerator overnight.

  5. Bake the covered brisket in the preheated oven for about 4 hours, or until its internal temperature reaches 190 F.

  6. Once cool, thinly slice the brisket against the grain.

  7. To make gravy, melt 4 tablespoons parve margarine in a saucepan and stir in 4 tablespoons all-purpose flour (or potato starch for Passover) for 3 minutes until slightly darkened.

  8. Gradually stir in 2 cups of drippings, then cook and stir until the gravy thickens.

  9. Season with salt and pepper, then pour some gravy over the brisket and serve the rest alongside.
