Instructions
-
Start boiling 8 cups of water (or 6 cups for a thicker soup) in a large pot.
-
Separately, rinse and pick 1 pound of dried yellow or green peas. If using whole peas, soak them overnight in water to cover by 2 inches.
-
Add the drained peas, 2 chopped onions, 1 whole onion studded with 2 cloves, 1 chopped carrot, and a ham bone or 2-3 ham hocks to the pot.
-
Bring the mixture to a boil, skim any foam, then cover and simmer on low heat for 90 minutes.
-
If using whole peas, skim any pea skins. Remove 2-3 cups of the soup, puree, and return it to the pot.
-
Continue simmering for at least 30 more minutes.
-
Thirty minutes before serving, remove the studded onion and meat. Chop the meat and return it to the pot.
-
Stir in 1 teaspoon dried thyme, 1 teaspoon ground ginger, 1 teaspoon salt, and 1/8 teaspoon pepper.
-
Simmer for an additional 15 minutes.
-
Serve, offering grainy brown mustard for stirring into the soup.
