Swedish Yellow Pea Soup Ärtsoppa Recipe

A healthy and low-calorie Swedish dried pea soup, traditionally prepared with yellow peas, smoked pork, and a blend of aromatic herbs.

Instructions

  1. Start boiling 8 cups of water (or 6 cups for a thicker soup) in a large pot.

  2. Separately, rinse and pick 1 pound of dried yellow or green peas. If using whole peas, soak them overnight in water to cover by 2 inches.

  3. Add the drained peas, 2 chopped onions, 1 whole onion studded with 2 cloves, 1 chopped carrot, and a ham bone or 2-3 ham hocks to the pot.

  4. Bring the mixture to a boil, skim any foam, then cover and simmer on low heat for 90 minutes.

  5. If using whole peas, skim any pea skins. Remove 2-3 cups of the soup, puree, and return it to the pot.

  6. Continue simmering for at least 30 more minutes.

  7. Thirty minutes before serving, remove the studded onion and meat. Chop the meat and return it to the pot.

  8. Stir in 1 teaspoon dried thyme, 1 teaspoon ground ginger, 1 teaspoon salt, and 1/8 teaspoon pepper.

  9. Simmer for an additional 15 minutes.

  10. Serve, offering grainy brown mustard for stirring into the soup.
