Swedish Tea Ring

A soft and fluffy Swedish-style tea ring, filled with sweet dried fruits and nuts, makes an ideal Christmas breakfast pastry.

Instructions

  1. Preheat oven to 375 F.

  2. Heat milk, butter, and sugar to a simmer, then cool to lukewarm.

  3. Stir yeast into the lukewarm mixture.

  4. Add 7 cups flour and stir.

  5. Cover and let dough rise in a warm place for 1 hour.

  6. Add remaining flour and baking powder, stir to combine.

  7. Divide dough into 2 or 3 pieces.

  8. Roll each dough piece into a 1/2-inch thick, long rectangle.

  9. Pour 3/4 cup butter over the dough, then sprinkle with half of the cinnamon and sugar.

  10. Top with half the dried fruits and pecans.

  11. Tightly roll dough, pinch the seam, and cut into 2-inch slices.

  12. Join the ends of the roll to form a ring, and place on a parchment-lined baking sheet.

  13. Cut about 10 slits 3/4 of the way through the ring, then turn each section onto its side.

  14. Brush rings with melted butter, cover, and let rise for 30 minutes.

  15. Bake for 25 minutes until lightly browned.

  16. Whisk powdered sugar, milk, almond extract, and vanilla extract for icing, adjusting consistency as needed.

  17. Cool rings slightly, drizzle with icing, then slice and serve.
