Swedish Christmas Ham (Julskinka)

Instructions

  1. Preheat the oven to 350 F.

  2. Rinse the ham well and pat it dry.

  3. Place the ham, rind-side up, on a rack in a roasting pan; roast until its internal temperature reaches 160 F, approximately 4.5 hours.

  4. Remove the ham from the oven and increase the temperature to 450 F.

  5. Carefully slice off and reserve the ham rind.

  6. Whisk egg yolks, brown sugar, and mustard, then spread this mixture evenly over the ham.

  7. Sprinkle the ham with crumbled gingersnaps or breadcrumbs until fully coated.

  8. Return the ham to the oven and roast for 15 to 20 minutes, or until golden brown.

  9. Remove the ham, cover loosely with foil, and let it rest for 15 minutes.

  10. Carve and serve warm, or allow it to cool completely for serving at room temperature or cold.
