Instructions

  1. Dry and season the steaks generously with salt and pepper.

  2. Melt butter in a large cast-iron skillet over high heat; sear steaks 2 to 3 minutes per side until desired internal temperature (125F for medium-rare, 130F for medium).

  3. Remove steaks, tent with foil, and let rest.

  4. Thoroughly dry scallops with paper towels and season with salt and pepper.

  5. Wipe the skillet clean, then heat grapeseed oil over medium-high heat.

  6. Add scallops and sear for 2 minutes per side; plate them with the steaks and tent.

  7. Deglaze the skillet with wine over medium-high heat, scraping up any browned bits.

  8. Add butter and garlic, cooking for 1 minute until fragrant.

  9. Remove from heat, then stir in parsley, chives, and lemon juice.

  10. Pour the herbed garlic butter over the rested steak and scallops and serve immediately.
