Super Tender Roasted Boneless Pork Loin

Preheat the oven to 450 F. Bring the pork loin to room temperature approximately 30 minutes before roasting.

Combine olive oil, minced garlic, kosher salt, black pepper, minced fresh sage, finely chopped fresh rosemary, and finely chopped fresh thyme in a small bowl to create a paste.

Pat the pork loin dry, then rub the seasoning paste thoroughly over its surface.

Place the seasoned pork on a rack in a shallow roasting pan and insert an oven-safe meat thermometer into the center; set it to alert at 135 F if using a digital thermometer.

Roast for 15 minutes at 450 F, then reduce the oven temperature to 300 F.

Continue roasting for an additional 40 to 60 minutes, or until the internal temperature reaches 135 F.

Remove the roast from the oven, cover it with foil, and allow it to rest for 10 to 15 minutes before slicing.
