Instructions

  1. Combine orange juice, lime juice, soy sauce, vinegar, oil, garlic, salt, pepper, cumin, and oregano in a container.

  2. Add the skirt or flank steak, ensuring it is fully coated, then refrigerate for 5 to 12 hours, flipping every few hours for even marination.

  3. Before grilling, let the marinated meat rest at room temperature for one hour.

  4. Preheat a grill to 450 F.

  5. Remove the meat from the marinade (discarding the marinade) and grill over direct heat for 8 to 10 minutes total, flipping once, until the edges are slightly charred.

  6. Slice the cooked steak against the grain into 1/4 to 1/2-inch strips and serve immediately.
