Super Easy Pea and Mint Soup

Instructions

  1. Heat 1 tablespoon olive oil and 1 ounce butter in a large saucepan over medium heat. Add 1 chopped red onion and cook for 10 minutes until soft.

  2. Stir in 1 minced garlic clove and cook for 30 seconds until fragrant.

  3. Add 3 3/4 cups peas, 1 cup mint leaves, and 2 3/4 cups vegetable stock. Cover and cook for 10 minutes until peas soften.

  4. Blend the soup until smooth.

  5. Return puree to the pan, season with 1/8 teaspoon salt and 1/8 teaspoon pepper. Stir in remaining 1 1/4 cups peas and 3/4 cup stock, then cook for 5 minutes.

  6. If desired, serve with 1/2 cup Parmesan in four warmed bowls and drizzle with olive oil.
