Summer Squash Fritters With Cheese

Instructions

  1. Start boiling water in a large saucepan; add cut squash chunks, then reduce heat to low, cover, and cook for 10-15 minutes until very tender. Drain the squash thoroughly.

  2. Mash the drained squash in a large bowl, then mix in all remaining ingredients until well blended.

  3. Refrigerate the batter for a few hours, or proceed to fry immediately.

  4. Heat about 2 inches of oil in a deep saucepan or fryer to 370 F.

  5. Drop spoonfuls of batter into the hot oil, cooking fritters for 3-4 minutes until golden brown, turning to brown all sides.

  6. Remove fritters with a slotted spoon and drain on paper towels.

  7. Serve hot with a dipping sauce.
