Instructions

  1. Start boiling water.

  2. Chill a medium mixing bowl.

  3. In a small bowl, combine cold water and gelatin; let stand 1 minute. Stir in boiling water until gelatin dissolves, then set aside.

  4. In the chilled bowl, combine sweetener, cocoa powder, salt, whipping cream, and vanilla extract. Beat with an electric mixer on medium speed until stiff, avoiding overbeating.

  5. Gently beat in the dissolved gelatin mixture until just combined, being careful not to overbeat.

  6. Spoon into dessert dishes and chill for 1 to 2 hours.
