Instructions

  1. Preheat oven to 425 F.

  2. Press pie pastry into a 9-inch pie plate, then line with foil and pie weights.

  3. Bake crust for 8 minutes. Remove weights and foil, then bake for another 6 minutes until lightly browned. Reduce oven to 325 F.

  4. In a saucepan, whisk sugar, cornstarch, salt, cream, and milk until smooth.

  5. Cook over medium heat, stirring constantly, until the mixture boils. Stir in butter and vanilla, then continue cooking until the filling thickens.

  6. Pour filling into the pie shell and sprinkle with cinnamon or nutmeg.

  7. Bake at 325 F for 35 to 45 minutes, or until firm and lightly browned.

  8. Cool on a rack completely, then chill thoroughly before slicing.
