Stuffed London Broil
A traditional slow-grilled and stuffed London Broil, perfect for special occasions and holidays.

Instructions

Preheat the grill.

Cut a horizontal pocket into the meat, about 3/4 of the way through.

Combine garlic, spinach, parsley, lemon, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.

Spread the mixture evenly inside the pocket.

Wrap the meat and refrigerate for 4 to 6 hours.

Remove meat and season with the remaining salt and pepper.

Place on the hot grill and cook over medium heat for 20 to 25 minutes, turning occasionally and carefully to keep the stuffing intact.

Optionally, add water-soaked wood chips for smoke: spread over coals for charcoal grills or wrap in foil and place under the cooking grate for gas grills.

Remove from heat when the internal temperature reaches 160-165 F; let rest for 10 minutes, then slice and serve.
