Instructions

  1. Heat oil to 350 F in a large pot, ensuring it reaches 2 inches up the sides.

  2. Halve pickles lengthwise and scoop out their innards.

  3. Combine cream cheese, cheddar, chives, dill, pickled jalapeño, honey, garlic powder, salt, and pepper in a bowl; mix until combined.

  4. Fill each pickle half with approximately 1 tablespoon of the cheese mixture, then enclose it with another pickle half. Repeat for all.

  5. Place a stuffed pickle in the center of an egg roll wrapper, orienting a corner towards you.

  6. Fold the bottom of the wrapper over the pickle, fold in the sides, roll tightly, and seal with a few drops of water. Repeat for remaining pickles.

  7. Fry about 4 egg rolls at a time until golden brown, approximately 1 minute per side. Transfer to a paper towel-lined plate to cool slightly.

  8. Serve warm, either plain or with your preferred dipping sauce.
