Combine softened cream cheese, 1 tablespoon milk, 1 tablespoon sugar, and 1 teaspoon vanilla extract in a bowl; adjust sugar to taste.

Pipe the cream cheese mixture into each bread pocket, distributing it evenly.

In a shallow bowl, whisk eggs with the remaining milk, sugar, vanilla extract, and salt; incorporate cinnamon or cardamom if desired.

Melt butter in a non-stick skillet over medium-low heat.
