Stuffed Eggplant Parmesan With Ground Beef

Instructions

Preheat oven to 350 F.

Hollow out eggplants to create sturdy shells, then dice the removed eggplant flesh.

Heat vegetable oil in a large skillet over medium heat and sauté the diced eggplant until soft; drain.

Add ground beef to the skillet and cook until browned, breaking it up; stir in garlic for 1 minute.

Stir in tomatoes, tomato paste, salt, and pepper; simmer for 15 minutes, stirring frequently.

Add breadcrumbs, Parmesan cheese, and the sautéed eggplant to the beef mixture and blend.

Spoon the mixture into the eggplant shells and top with mozzarella cheese.

Bake for about 25 minutes.

Serve over cooked green beans, spaghetti squash, or spaghetti with marinara sauce.
