Strawberry Pâte de Fruits Recipe
These fruit candies deliver intense fresh strawberry flavor in a chewy square.

Instructions

Line an 8x8-inch pan with foil or parchment paper and spray with nonstick cooking spray.

Puree strawberries in a blender or food processor.

Strain the pureed strawberries into a medium saucepan, discarding any solids.

Stir in lemon juice and 1/2 cup sugar; insert a candy thermometer and heat over medium-high.

Cook, stirring constantly, until the mixture reaches 140 F.

Add the remaining 1.5 cups sugar and liquid pectin, then reduce heat to medium.

Continue cooking, stirring frequently, until the mixture reaches 200 F.

Reduce heat to low and maintain 200 F for 2 to 3 minutes.

Increase heat to medium and bring the mixture to 225 F.

Once at 225 F, reduce heat to low and maintain for an additional 2 to 3 minutes.

Remove from heat and transfer the mixture to the prepared pan, spreading it into an even layer.

Allow to set at room temperature for several hours until firm, then cut into small squares and roll in granulated sugar.
