Strawberry Ice Cream Recipe

Instructions

  1. Combine 3 cups hulled, sliced strawberries with 4 tbsp lemon juice and 1/2 cup sugar; stir. Let stand 2 hours at room temperature for juices to release.

  2. Strain berries, reserving the juice.

  3. Halve berries; mash or puree one half. Refrigerate the remaining half.

  4. In a separate bowl, combine 1 1/2 cups whole milk and 1 cup sugar; stir until dissolved.

  5. Stir in 2 3/4 cups heavy cream, reserved strawberry juice, mashed strawberries, and 2 tsp vanilla extract. Optionally add red food coloring for deeper color.

  6. Churn ice cream per machine directions for 20-25 minutes.

  7. Add reserved sliced strawberries 5 minutes before churning completes. For small machines, mix these berries into the churned ice cream within a freezer container.

  8. Freeze for at least 2 hours to firm before serving.
