Instructions
-
Prepare 1/4 cup strained strawberry puree by blending and straining fresh or warmed frozen berries.
-
Place chopped chocolate in a large bowl. In a small saucepan, combine the 1/4 cup strawberry puree, heavy cream, and corn syrup, then bring to a boil, stirring frequently.
-
Pour the hot cream mixture over the chopped chocolate; let sit for one minute, then whisk until smooth.
-
Whisk in room temperature butter until fully incorporated.
-
Chop 3/4 cup freeze-dried berries, add them to the ganache, and stir until well-mixed.
-
Cover the ganache with cling wrap and refrigerate for approximately 2 hours until firm enough to scoop.
-
Scoop the firm ganache into small balls, then dust palms with cocoa powder and roll them until perfectly round.
-
Arrange truffles on a covered baking sheet. Melt candy coating in the microwave.
-
Dip each truffle into the melted coating, tap off excess, and place back on the baking sheet. While the coating is still wet, top with a piece of reserved freeze-dried strawberry.
-
Repeat this process for all remaining truffles.
