Instructions

  1. Prepare 1/4 cup strained strawberry puree by blending and straining fresh or warmed frozen berries.

  2. Place chopped chocolate in a large bowl. In a small saucepan, combine the 1/4 cup strawberry puree, heavy cream, and corn syrup, then bring to a boil, stirring frequently.

  3. Pour the hot cream mixture over the chopped chocolate; let sit for one minute, then whisk until smooth.

  4. Whisk in room temperature butter until fully incorporated.

  5. Chop 3/4 cup freeze-dried berries, add them to the ganache, and stir until well-mixed.

  6. Cover the ganache with cling wrap and refrigerate for approximately 2 hours until firm enough to scoop.

  7. Scoop the firm ganache into small balls, then dust palms with cocoa powder and roll them until perfectly round.

  8. Arrange truffles on a covered baking sheet. Melt candy coating in the microwave.

  9. Dip each truffle into the melted coating, tap off excess, and place back on the baking sheet. While the coating is still wet, top with a piece of reserved freeze-dried strawberry.

  10. Repeat this process for all remaining truffles.
