Strawberry Compote in a Flash

Instructions

  1. Rinse and hull 1 pound of strawberries, cutting larger ones in half or quarters.

  2. Combine the prepared strawberries with 2 tablespoons sugar and 3 tablespoons orange juice or water in a saucepan.

  3. Bring the mixture to a boil, then reduce heat and simmer for 5 to 10 minutes until the berries are soft and the liquid thickens.

  4. Taste and add more sugar if desired; if too thin, stir in a mixture of 1 tablespoon water and 1 tablespoon cornstarch before removing from heat.

  5. Cool completely, then transfer to a clean pint jar and refrigerate for up to two weeks.
