Stone-Ground Grits

A versatile staple, stone-ground grits can be prepared using stovetop or slow cooker methods with minimal ingredients.

Instructions

  1. Start boiling 4 1/2 cups water and 1 teaspoon salt in a medium saucepan.

  2. Gradually stir in 1 cup stone-ground grits; reduce heat to low and cook, stirring frequently, for 40 to 50 minutes until very thick, adding more hot water if needed.

  3. Stir in 4 to 6 tablespoons unsalted butter and black pepper as desired.

  4. Alternatively, combine 4 1/2 cups water, 1 teaspoon salt, and 1 cup stone-ground grits in a 3- to 4-quart slow cooker, then skim any floating solids.

  5. Cover and cook on high for 3 hours, stirring every 30 to 45 minutes.

  6. Stir in 4 to 6 tablespoons unsalted butter and black pepper as desired.
