Stir up Some Spargelsuppe (Creamy White Asparagus Soup)

Instructions

  1. Sauté onion in butter in a saucepan over medium-low heat until soft.

  2. Add asparagus pieces (excluding tips), cover, and steam for 5 minutes.

  3. Pour in broth and gently boil for 30 minutes until asparagus is very soft.

  4. Puree the soup until smooth using a blender or hand blender.

  5. Return the pureed soup to the pan, bring to a simmer, and add reserved asparagus tips; cook for 5 minutes or until tender.

  6. Reduce heat, stir in half-and-half until warmed, do not boil.

  7. Season with salt and pepper to taste.

  8. Optionally, stir in white wine for acidity.

  9. Garnish with parsley and serve.
