Stir up Some Spargelsuppe (Creamy White Asparagus Soup)
A creamy pureed German white asparagus soup, often enjoyed in springtime, made with broth and a touch of cream.

Instructions

Sauté onion in butter in a saucepan over medium-low heat until soft.

Add asparagus pieces (excluding tips), cover, and steam for 5 minutes.

Pour in broth and gently boil for 30 minutes until asparagus is very soft.

Puree the soup until smooth using a blender or hand blender.

Return the pureed soup to the pan, bring to a simmer, and add reserved asparagus tips; cook for 5 minutes or until tender.

Reduce heat, stir in half-and-half until warmed, do not boil.

Season with salt and pepper to taste.

Optionally, stir in white wine for acidity.

Garnish with parsley and serve.
