Stir-Fry Chicken in Rice Wine

Instructions

  1. Chop chicken into bite-sized pieces, retaining bones.

  2. Heat wok to medium-high, then add peanut or vegetable oil and sesame oil.

  3. Once oil is hot, stir-fry sliced ginger until almost brown, then add minced garlic and continue stir-frying until nearly brown.

  4. Add chicken slices; sear briefly, then stir-fry until slightly browned and 80% cooked.

  5. Pour in rice wine and continue stir-frying.

  6. Stir in soy sauce, dark soy sauce, and white pepper, ensuring ginger and garlic do not burn.

  7. Gradually add hot water or chicken stock; continue frying until liquid reduces by half. Taste and season with salt if needed.

  8. Serve chicken garnished with spring onions.
