Stir-Fry Beef With Chinese Green Beans

A classic beef and green bean stir-fry, reminiscent of a favorite Chinese restaurant buffet offering.

Instructions

  1. Wash, trim, and diagonally slice green beans into 2-inch pieces.

  2. Cut beef across the grain into thin 2-inch strips.

  3. Combine dark soy sauce, light soy sauce, and sugar in a small bowl; set aside.

  4. Heat a wok over medium heat, then add 2 tablespoons of oil.

  5. Add green beans to hot oil and stir-fry 7-10 minutes until tender and browned; remove from wok.

  6. Heat remaining 2 tablespoons oil in the wok over high heat. Add garlic, ginger, and scallions; stir-fry briefly. Add chiles or chile paste and stir-fry until aromatic.

  7. Add beef strips, sear, then stir-fry until color changes, splashing with rice wine.

  8. Return green beans to the wok with the prepared sauce; stir in scallions. Taste and adjust seasoning with pepper and salt.

  9. Remove from heat, stir in sesame oil if using, and serve hot.
