Instructions
-
Slice beef across the grain into 2-inch pieces. Marinate beef for 25 minutes with the specified ingredients, adding cornstarch last.
-
While beef marinates, combine oyster sauce, dark soy sauce, and water. Rinse and drain bamboo shoots. Chop garlic, slice bell pepper into strips, and cut green onions diagonally.
-
Heat wok to medium-high. Add 1.5 tablespoons oil. Stir-fry half the garlic for 10 seconds, then add half the beef. Cook until 80% done. Remove and repeat for remaining beef, optionally adding rice wine or sherry.
-
Wipe the wok and add 1 tablespoon oil. Stir-fry remaining garlic for 10 seconds, then add bell pepper. Cook for 1 minute, then add bamboo shoots, stir-frying for another minute. Add a splash of liquid if needed.
-
Add sauce to wok and bring to a boil. Return cooked beef and green onions to the wok. Stir-fry for 1 minute to combine. Serve with rice.
