Stir-Fry Beef With Bamboo Shoots

Instructions

  1. Slice beef across the grain into 2-inch pieces. Marinate beef for 25 minutes with the specified ingredients, adding cornstarch last.

  2. While beef marinates, combine oyster sauce, dark soy sauce, and water. Rinse and drain bamboo shoots. Chop garlic, slice bell pepper into strips, and cut green onions diagonally.

  3. Heat wok to medium-high. Add 1.5 tablespoons oil. Stir-fry half the garlic for 10 seconds, then add half the beef. Cook until 80% done. Remove and repeat for remaining beef, optionally adding rice wine or sherry.

  4. Wipe the wok and add 1 tablespoon oil. Stir-fry remaining garlic for 10 seconds, then add bell pepper. Cook for 1 minute, then add bamboo shoots, stir-frying for another minute. Add a splash of liquid if needed.

  5. Add sauce to wok and bring to a boil. Return cooked beef and green onions to the wok. Stir-fry for 1 minute to combine. Serve with rice.
