Stinging Nettles Soup

Instructions

  1. Wearing gloves, rinse nettles; peel and chop onion and potatoes.

  2. In a large pot, melt 1 tablespoon butter over medium-high heat; cook onion with salt for 3 minutes until soft.

  3. Add potatoes and broth; bring to a boil, then reduce heat to simmer for 15 minutes until potatoes are tender.

  4. Stir in nettles and cook for 10 minutes until very tender; incorporate remaining 1 tablespoon butter, pepper, and nutmeg.

  5. Purée the soup until smooth using an immersion or standard blender.

  6. Stir in cream if desired; season to taste with salt and pepper, and serve hot with optional garnishes.
