Stinging Nettles Soup

Instructions

Wearing gloves, rinse nettles; peel and chop onion and potatoes.

In a large pot, melt 1 tablespoon butter over medium-high heat; cook onion with salt for 3 minutes until soft.

Add potatoes and broth; bring to a boil, then reduce heat to simmer for 15 minutes until potatoes are tender.

Stir in nettles and cook for 10 minutes until very tender; incorporate remaining 1 tablespoon butter, pepper, and nutmeg.

Purée the soup until smooth using an immersion or standard blender.

Stir in cream if desired; season to taste with salt and pepper, and serve hot with optional garnishes.
