The next day, spray a 4-quart slow cooker with nonstick spray. Layer onions at the bottom, then add the chicken.

Whisk together honey, brown sugar, and ketchup in a separate bowl; drizzle this sauce over the chicken.

Cover and cook on low for 8 to 12 hours until the chicken is very tender and reaches an internal temperature of 165 F.
