Instructions

Heat olive oil in a pan over medium heat.

Sauté garlic and chosen herbs (thyme, parsley, or nepitella) for 1 to 2 minutes until the garlic is pale golden.

Add mushrooms, increase heat to high, and cook, stirring, until the mushrooms release their water.

Reduce heat to low, stir in the tomato, and simmer for approximately 30 minutes; add white wine or broth if the mushrooms start to dry out.

Season to taste with salt and pepper.

Garnish with fresh parsley and serve.
